How to Use Cream Chargers
The cream charger is simply a small cylinder of pressurized nitrous oxide gas – the interaction between the gas the cream as the pressure changes upon release from the whipped cream dispenser is what causes the cream to whip. The key stages are:
- Combine the gas with the cream under pressure – this is done within the dispenser and takes place as soon as N2O gas is released form the charger and allowed to combine with cream in the body of the whipped cream dispenser. When this takes place the gas is forced into solution with the fatty molecules of the cream. It is for this reason that cream with a fat content of about 30% must be used.
- Reduce the pressure to allow the gas to expand – this is done by simply pulling the lever on the head of the cream whipped and allowing the contents to achieve atmospheric pressure. When this happens then the gas will expand; as it does so then it causes the fat molecules in the cream to coalesce and temporarily set – holding the bubbles created by the gas to remain in place.
These tiny pieces of steel contain lots of cream whipping gas package into a tiny little refill capsule - a feat of engineering and all sold at wholesale prices!

Chocolate cake with whipped cream chargers
No one could refuse the treat of a good chocolate cake. Especially when you can prepare it in less than 2 hours. The piece of resistance of this cake is made by the combination of the whipped cream and the fruits. Chocolate is a luxury item and when combined with cream it makes for a silky smooth and slightly posh treat. Ask any old person about rationing and they will all tell you it is the chocolate that they missed the most - and chicory, acorn coffee was no substitute.
By making your cream with cream chargers and letting the nitrous oxide gas add the fluff to your cream you will get a lighter product to balance the density of the chocolate. For a subtle twist then add a bit of caramel syrup to the cream before pouring it into the dispenser and releasing the gas from the charger.
A perfect companion for a birthday party, but also for a main meal during the high holiday season.
For the preparation of the cake:
- 2 cups flour
- 3/4 cup vegetable oil
- 1 cup white or brown sugar; honey can also be used
- 4 eggs, separated
- ½ vegetable oil
- ½ cup water
- 1/2 cup cocoa
- 1/4 teaspoon fine salt
- 1 tbs. baking powder
- 1/4 cup water
- 1/2 tbs lemon zest, finely grated
- 1 tbs. vanilla extract
- 2 cups of heavy whipping cream
- 1/2 cup of white or brown sugar; alternatively, you can also use honey
- 1/2 tbs. vanilla extract
- Disposable cream charger
- ¾ cup finely cut blueberries
The preparation of the cake:
Mix together the flour and the baking powder and let the mixture rest for a couple of minutes. Add the water, the salt, ¾ of the sugar and the cocoa. The mixture should be whipped slowly, until it gets a smooth consistency. Add after the rest of the sugar and the egg whites, beaten carefully before. Mix again the entire composition for around 5 minutes.
Prepare the cake pans, pour the content of the mixture and cook it for around 20 minutes in a 350F preheated oven. Remove the cakes from the oven and keep them cool for around 15 minutes before finishing the entire composition.
For the composition:
Introduce in the shaker of the whipped cream dispenser the sugar, vanilla and the cream. Mix them together for around 1 minute until the entire composition reaches soft peaks.
After the cake is done, cut it horizontally and fill in half of the amount of fruits. Adorn with the whipped cream the cake, both on the top and laterally. The remaining fruits can be used as a decoration of the cake.

You should be careful to do not overbeat as the whipped cream can turn easily into butter losing the needed consistency.
Instead of berries, you can use various season fruits: cherries, sour cherries – case in which you should add extra sugar – strawberries or peaches.
If you do not have children between guests, you can use instead of vanilla, the same quantity of Amaretto or Kahlua liqueur. If you like the strong coffee taste, you can use a mixture of cocoa and coffee as well. The super-sexy liqueur can be mixed with the cream before using the cream chargers.
