Rhubarb & Orange Meringue Pie

 
This dessert provides a delightful orange tang to the flavour resulting in an intense warmth but, at the same time, includes a crisp, crunchy softness on top.  It is always a firm favourite for young and old alike and by adding whipped cream from a whipped cream dispenser, will provide an overall yummy result that will perfectly satisfy everyones taste buds.
 
You will need the following items:
 
200 grammes plain flour
125 grammes  butter (unsalted)
50 grammes icing sugar
1 large egg
1 kilogramme rhubarb (prepared)
325 grammes caster sugar
1 orange (use grated rind)
4 large egg whites
2 teaspoons cornflour
 
Make the pastry by putting the sifted flour in a bowl with the butter. Proceed to rub in until mixed well together.  Stir in icing sugar.  Then add the egg which will combine it all.  Place on to a floured surface and mix to form a ball.  Wrap in cling film and refrigerate for about 15 minutes. Then roll pastry out and place in suitable tin.  Chill for a further 20 minutes. 
 
Mix the rhubarb with 125 grammes of caster sugar and orange rind and place in the oven in an ovenproof dish at a pre-heated temperature of 150 degrees C / 300 degrees F / Gas mark 2 for about 20 minutes.  Retrieve from the oven and drain.  Switch the oven up to 180 degrees C / 350 degrees F / Gas Mark 4 in readiness for baking the pastry case.  Remove pastry from refrigerator, line with tin foil and put baking beans inside.  Bake for 15 minutes then remove the foil and beans and continue baking for another 8 minutes.  Take out from oven.
 
For the meringue, put egg whites in to a bowl and whisk until quite stiff.  Slowly add half the caster sugar whisking all the time.  Add cornflour and the remainder of the sugar and ensure all mixed in well. 
 
Put the fruit into the pastry case then add the meringue.  Bake for about 30 minutes.
 
When serving, add whipped cream from the whipped cream dispenser to decorate and add the final delicious touch.
 
Alternatives for this recipe are apple, lemon or nectarine which are equally scrumptious and well received.
